             Guidelines for Planning Your Hors D'oeuvres Buffet

Time of Day

If you are planning an event over a normal mealtime, your guests will come hungry.  Choose items that are heavier and expect the number of pieces per person to increase.  Events planned between normal mealtimes or in the evening after dinner usually require less food and may be a lighter fare.

Length of Event

If the event is an "open house" and your guests are likely to stay for a short period of time, you can adjust the number of pieces per person.  Usually in the first hour, your guests will consume approximately 8-12 pieces per person and less in the 2nd and 3rd hours.  Women are likely to eat less than men, so your guest list will impact the quantity of food.

Food Item Choices

Most men seem to prefer familiar foods - sandwiches, cocktail meatballs, chicken bites, cheese, fruit and vegetables - things that they know they will like.  While women also choose familiar foods, they
are more likely to try things that are new to them or are made with less common ingredients.  Breads and spreads are a female favorite.  During the cooler months, you will want to plan at least one warm food and one warm beverage.  It is also nice to serve at least one sweet treat.

Some of the items on the menu are grouped together around a Southwestern or Italian theme.  The number of different items on your buffet will be determined by the size of your event and the time of day.

About the Budget

The items on our Hors D'oeuvres Menu are served buffet style.  We set up and create a display of food so that your guests can easily serve themselves.  The need for catering staff is minimal or not even necessary.  If we provide a staff member to remain at your event, the cost is $25 per hour per catering staff member.  If you would like to avoid the cost of additional catering staff we can advise your designated "helper" to watch over and/or replenish your buffet.

Hors d'oeuvres are served on small plates.  The size of the plate will help control the quantity of food consumed.  Of course, your guests are able to come back to the buffet as often as they want.  If you are serving food prior to a meeting and you are not expecting attendees to move around, it is appropriate to provide a larger plate.  This is especially important if your buffet is served at a mealtime.
